Protein French Toast

Oh my, who doesn’t love breakfast for supper?????  Especially when it is something as delicious as french toast.  And to boot, this french toast is loaded with protein and actually healthy.

french toastMy good friend, Dianne, is always trying new recipes and fortunately for me, she loves to share those recipes.  This protein french toast is one of her creations.  Enjoy :)

Ingredients:

2 slices of bread (I use either Sara Lee 45 calorie or this Alpine Valley Bread that you can get at Sprouts.

2 servings of liquid egg whites

1/3 to 1/2 scoop P4P Ice Cream Sandwich Protein Powder (I suppose you could use another brand, but this stuff is the bomb.com)

1/2 cup Arctic Zero vanilla maple

1 TBLS sugar free maple syrup

Cinnamon

strawberries, blueberries, blackberries, raspberries, apples, peaches, etc….. for topping

Directions:

Mix the egg whites & protein powder together and pour over bread.  Let it soak in for about 10-15 minutes.

Take Arctic Zero out of the freezer and let it start to thaw while you are making the french toast.  (This is a VERY important step).  The ice cream taste so much better after it has been out for a few minutes.

Spray a non-stick griddle with coconut oil spray and let it heat up just a few minutes.  Then fry both sides of the bread until it is brown.  Take off griddle and assemble your french toast:  toast, berries, ice cream, dash of cinnamon, drizzle of syrup – BAM!!!!!

Nutritional info for just the french toast & ice cream-no fruit toppings included(using the Sara Lee bread & 1/3 scoop of protein powder)
