Cinnamon Bun Zoats

zoats1Ok, Ok – I have tried some crazy things in my life and will eat almost anything once – but once I heard about this crazy combination I had to give it a whirl.

There is nothing better than a big bowl of warm oatmeal to fill up your belly, right?  Well, even though oatmeal is pretty good for you, it has a crazy amount of carbs, so I had basically stopped eating oatmeal.  <insert frowny face here>  Then along came the creation of zoats (or at least my first introduction to the magical world of zoats)

Zoats – what the heck kind of made up word is that???  Well, you take a small amount of oatmeal, add in some egg whites, a little spices, maybe some protein powder and grated zuchinni and you end up with a large bowl of yummy goodness that still taste like oatmeal but has added protein and less carbs.  The possibilities are endless with what you can add into your zoats too.  Here is my basic recipe:

Ingredients:

1/2 cup water

cinnamon

liquid stevia drops (you can use any sweetener you like)

1/2 cup of liquid egg whites (or approximately 2 egg whites)

1/3 cup of oatmeal

1 medium zuchinni grated & drained (I actually had to squeeze the excess water from my zuchinni)

1/4 scoop protein powder ( I used P4P Cinnamon Bun flavor-so yummy)

Directions:

Bring water to boil, add in any spices & sweetener

Add in egg whites and stir constantly for a few minutes.

Next add in oatmeal & zuchinni and reduce heat.  Add in any protein powder & more spices to taste.  Simmer until the mixture is the consistency you want.  Mine took about 4-5 minutes.

Makes 1 serving: 24 Protein, 27 carbs, 2 fat

You can then add peaches (like in this picture) or any fruit, peanut butter, almond butter, cocoa, nuts – absolutely anything you like.
