Veggie Stir Fry with Cauliflower Rice

greenbeanaspYep, I finally did it.  I have been reading about cauliflower rice for awhile and thought it sounded good, but assumed it was time consuming and difficult.  Well, I finally took the plunge and found out that this stuff is pretty simple to make.  I searched several different recipes online and kind of came up with my own version that seemed pretty easy.  I figured if nothing else, I would just have mushy cauliflower with my stir fry :)

So here goes my easy veggie stir fry recipe with cauliflower rice:  I used asparagus, green beans, and broccolini – but you could certainly use any veggies that you have on hand.

Cauliflower Rice:

1 head of cauliflower cut into small pieces

1/2 yellow onion cut into chunks

lemon juice, salt & pepper to taste

 
Put the onion & cauliflower into a food processor and let it go.  I had to do mine in a couple of batches to get all the cauliflower pieces to the bottom.  You don’t want it too fine, but in small (rice-like) pieces.  Spray a non-stick skillet (I used coconut oil spray) or you can heat a little bit of olive oil – your choice.  Then throw in the cauliflower/onion mixture.  Add the lemone juice & spices.  Cook & stir until it starts to brown – That’s it!!!!  See how easy that was.

(On a side note, I can’t wait to try this with other spices – cilantro lime???? mexican??? cumin & coriander???  The possibilities are endless)

For the stir fry, I again used coconut oil spray on my non-stick skillet and then added the veggies.  I let them cook for about 5 minutes or so and then I added this amazing sauce called “The Ginger People Hot Ginger Jalapeno Spicy Dip”  This dip is a little thick for a sauce, so I diluted it with an equal amount of water.  I think I used about 1/4 cup of each.  I let the veggies continue to cook for about 5 more minutes until they were tender, but still had a little bite.
