Quick Kale Salad

kalesaladOver the last year, I have really come to love kale.  And with all the amazing benefits that kale offers I am constantly looking for new ways to add it to my weekly menu.  Here are just a few of the benefits:

  • It has more vitamin C than an orange
  • Kale is high in iron
  • Kale is high in calcium. Per calorie, it has more calcium than milk
  • It is a great detox food. Kale is filled with fiber and sulfur, both great for detoxing your body and keeping your liver healthy

Now onto the recipe:

 

Quick Kale Salad

1 head of Kale, shredded (I will sometimes use the packages of pre-washed kale to save time)

6-7 cherry tomatoes, sliced

1 avocado, chopped (make sure it is ripe and soft)

1 bell pepper (I usually like to use red, orange, or yellow)

1-2 Tbsp onion, chopped (I love this with red onions, but last night I only had yellow and it was just fine)

1 lemon, juiced

dash of sea salt

dash of cayenne pepper

Some of the recipes I have seen call for 1-3 Tbsp of flaxseed or olive oil, but I don’t think you need it necessarily.  You can try it for yourself and see which way you like it.

You can also add some sunflower and/or pumpkin seeds or a variety of nuts and make this a main dish

Mix all ingredients in a large bowl with your hands, making sure to squeeze as you mix.  This helps to soften the kale and kind of creams the avocado.
