Triple Berry Raw Pie with Cashew Cream

berrypie4When it comes to sweets, sometimes I just can’t resist myself.  I love sweets, but the old fashioned sweets with good ole white sugar don’t love me :)  I am always trying to find new recipes for sweets that not only taste good, but are good for you.

During the 4th of July weekend, I wanted to make something sweet.  Since I love fresh berries of any kind, I looked around Pinterest for a berry cobbler or berry pie that didn’t have any processed sugar.  I found several different recipes, but nothing that was exactly what I wanted, so I combined several of them to come up with this:

Triple Berry Raw Pie with Cashew Cream


1 cup of walnuts

1 1/2 cups of almonds

1 1/2 cups of dates (pitted)

1/4 cup unsweetened shredded coconut

1 tsp cinnamon

Place all ingredients in food processor and mix until it sticks together when pinched between your fingers.  Press into a 9 inch pie pan.

2 cups blueberries

1 1/2 cups of blackberries

1 1/2 cups of strawberries

3 TBLS agave nectar

1 1/2 TBLS arrowroot powder ( corn starch can be used instead)

*You can use any combination of berries that you want.

Take 2 cups of the berries and mix it with the agave nectar in a blender.  Place the mixture in a small saucepan over medium heat and add the arrowroot powder until it thickens.  Add this mixture to the remaining berries and pour in the crust. Refrigerator for at least 1 hour.
