I am constantly looking for new dips or snacks to take to social gatherings that taste good but that are also good for you. I have made the Spicy Edamame Dip from the Karma Chow cook book and it is really good. Last week when I was needing to make something quick to take to a church get together, I thought about making the edamame dip but also was craving guacamole – so I decided to create a whole new dip – and along came Edamole!!!
16 oz frozen edamame (cooked according to package directions)
4 cloves garlic
1 1/2 tsp pink Himalayan sea salt
1 tsp coriander
1 tsp cumin
1/2 tsp cayenne pepper
2 Tbls cilantro
Juice of 1 lime
1Tbls olive oil
2 ripe avocados(I used 1 large and 1 small)
1/4 cup diced red onion
1 small tomato diced
Blend edamame, garlic, and spices in a food processor until mixed well. Slowly add olive oil and lime juice and mix until smooth. Then add the avocado and mix one last time until it is all mixed together. Mix in onion and tomato by hand. Serve with chips or veggies!! This is also great on top of a veggie burger.
I like my dips to have a little bit of kick so the 1/2 tsp of cayenne was perfect for me, but you may want to start with 1/4 tsp and adjust to your taste.
